Disney World Confirms Summer Opening for Six Ravens

Walt Disney World has shared everything new coming to Disney Springs in Summer 2026, including exciting new eats, entertainment, experiences, and more. This includes the Six Ravens restaurant concept by Gideon’s Bakehouse. Here’s the latest.

According to Walt Disney World, the district is ‘leveling up’ for Cool Kids’ Summer, which starts May 26, 2026. As part of this, the interactive gaming experience Level99 is debuting on the West Side next to Drawn to Life by Cirque du Soleil theater and across from House of Blues, and there’s more happening all around Disney Springs.

Also new at Disney Springs at the Landing in Summer 2026, a little raven shared some exciting details about new flavors to feast on. Gideon’s Bakehouse, the fan‑favorite local bakery at Disney Springs, is introducing a new culinary concept: Six Ravens.

Specializing in grab-and-go hand pies, their signature creation, known as Coffyns, is a house‑made yeast‑roll stuffed with savory fillings that draw inspiration from Medieval European pastry cases. The original “coffyns” were designed to preserve hearty meals for long pilgrimages, and at Disney Springs, they’ll be a delicious (hopefully) on-the-go snack.

Pair the Coffyns with smashed potatoes and dips like sweet heat and homemade honey mustard. Six Ravens will also have local beers crafted in partnership with Orlando favorites like Sideward Brewing and The Ravenous Pig.

Work started on Six Ravens late last year and the restaurant was announced in mid-January. That happened after walls went up around the empty Art of Shaving store and signs started to appear–literally and figuratively–that Gideon’s was the ‘mystery tenant’ filling the vacancy.

Note that this announcement does not include an official opening date for Six Ravens. I would not construe this as being part of Cool Kids’ Summer, even though there are few things children love more than medieval-themed pastries and craft beverages in a former shaving storefront.

That May 26, 2026 start date for the event has no bearing on Six Ravens, even if having it open by Memorial Day weekend would make sense. I haven’t been at Disney Springs in a few weeks, but last I was there, the former Art of Shaving facade looked like it was already nearly finished. (Obviously, impossible to tell how far along the interior was, and that’s probably where the bulk of the work was to be done.)

Although unrelated to Six Ravens, Walt Disney World made a couple of other announcements concerning Cool Kids’ Summer at Disney Springs.

On select nights, the AdventHealth Waterside Stage will come alive with high‑energy dance parties celebrating the newest original movies coming to Disney+. Jam all night to hits from Descendants: Wicked Wonderland and Camp Rock 3.

Since this is part of Cool Kids’ Summer, it’s safe to assume it starts on or around May 26, 2026 and runs until September 8, 2026. Of course, it is only ‘on select nights,’ so it could start later. I assume that means it’s most likely happening weekends or at least not happening on off-peak weekdays.

In addition to this dance party, Walt Disney World teased that a few more pop-up stores will debut soon. This makes sense, as locations keep closing at Disney Springs. They also reiterated that the CrazyShake pop-up ends soon, which is surprising–I figured it’d be extended indefinitely.

It’s not a huge surprise that Six Ravens is opening in Summer 2026. Back when he was interviewed by the Orlando Sentinel in January, Gideon’s Bakehouse founder Steve Lewis indicated that was his target.

He also emphasized the importance of featuring other Central Florida small businesses, and explained that he had been experimenting with the coffyns for years, often with friends and peers from the Orlando-local food scene, including Bruno Zacchini of Pizza Bruno and Eliot Hillis of Red Panda Noodle.

Lewis attributed the launch of Six Ravens to the creativity of the Gideon’s Bakehouse team. “They all come from these incredible restaurants and backgrounds and have so much creativity and knowledge they don’t get to flex at Gideon’s,” he explained.

“Six Ravens has allowed them to do what they’ve done best in the past. As the owner of a business, I feel like my greatest responsibility is to give creative and professional growth opportunities to my team…but Gideon’s is only 1,600 square feet between two stores. There’s only so far I can go.”

Six Ravens’ pastries will feature internationally-inspired fillings. One of those will come from Hillis of Red Panda Noodle, which will bring a curried chicken salad pie to fruition at Six Ravens. “We knew we wanted something that would stand out and that people could recognize as Red Panda,” he said.

Six Ravens will also feature the creation of new characters, like the ominous figure known as the Six Ravens that can take bird or female form. Art director Michael Reyes will bring his distinct style to Six Raven. Reyes and Lewis have been collaborating since 2006, with the former’s imagery having helped craft the Gideon’s brand.

Studio 407, a fixture of the themed attractions space, will once again work on design for Six Ravens, following up on their award-winning design of Gideon’s Bakehouse at Disney Springs. Expect Six Ravens to have a merchandising component to go along with the Coffyns, beer, and desserts.

We expect Six Ravens to be a huge hit and instant fan-favorite, just like Gideon’s Bakehouse. From day one at Disney Springs, Gideon’s has had a long line (we were there!). It’s continued to grow in popularity since. Guests line up for cookies and coffee, but also limited-edition collectible merchandise, special releases, and more. Below is a photo of the line from a random day last month.

We’re huge fans of Gideon’s Bakehouse, and have been anxiously awaiting this second concept announcement since the signs first went up. We first “discovered” Gideon’s back in 2017 shortly before moving to Florida, and it was hardly a discovery–all of our friends who lived in the area were already raving about it.

Gideon’s Bakehouse has been a smash sensation since opening at Walt Disney World. The existing location still uses a virtual queue at busier times, even 5+ years later. It’s developed a loyal fan following, and understandably so from our perspective, as the cookies are incredible and the shop’s seasonal releases keep people coming back. It’s worked on us!

Suffice to say, this is the most excited we’ve been for a new restaurant at Walt Disney World since, ironically enough, mid-2020, back when the original Gideon’s Bakehouse announcement was made.

We’re looking forward to savory foods to offset the sweets, and collaborations with other Central Florida restaurants we love (and miss!). There’s a ton of potential here, and the savory snack scene at Walt Disney World has room for improvement.

It’s also nice to see Walt Disney World embracing more locally-owned small businesses. As it stands, arguably 3 of the best options at Disney Springs are all based in the Orlando area!

To each their own, but I’ve lost interest in celebrity chefs. I don’t dislike that those restaurants exist at Disney Springs. It just seems played out and like Walt Disney World is chasing Las Vegas or some other large city…or every airport. It’s time for something different, and Florida-based businesses are a great evolution to give Disney Springs more texture and personality.

If these hand pies deliver–and we fully expect that they will–the one-two, sweet and savory punch of Six Ravens and Gideon’s Bakehouse suddenly becomes our optimal meal at Disney Springs!
